Cherry Popper Parfait
This dessert will Pop Your Cherry! (Even you reconstituted virgins out there)
What could be better than a chocolate fudge cake, Bourbon-soaked cherries, Chocolate pudding, Chocolate Mocha Mousse, and Whipped cream?
Chocolate Cake, Chocolate Pudding, Chocolate Mousse, and Bourbon Soaked Cherry Parfait
Dreamy Chocolate Fudge cake, Bourbon-soaked cherries, Chocolate Pudding, Chocolate Mocha Mousse, and Whipped Cream layers
Chocolate Cake Mix
- Eggs (as suggested by cake mix)
- Butter or Oil (as suggested by cake mix)
- Water (as suggested by cake mix)
1/2 lb Fresh Cherries (pitted and halved)
1/2 Cup of your Favorite Bourbon to marinate cherries
Chocolate pudding
- 1 5.1oz Jello Instant Chocolate Pudding
- 2 ½ cups Milk (We reduce the milk requested on the pudding box to make the pudding thicker)
Chocolate Mocha Mousse
- 8 oz Mascarpone Cheese
- 1 ⅓ cup Heavy whipping cream
- ¼ cup Sugar
- 1 ½ tbsp Unsweetened cocoa powder
- ⅓ cup Kahlua
- ⅔ tsp Instant Espresso powder
Whipped Dairy Topping (Spray can)
- 1/4 cup chopped pecans
Soak your fresh Cherries in Bourbon
Wash, De-stem, and 1/2 the cherries remove the pits and place in a small bowl
Pour your favorite Bourbon on top
Make Chocolate Cake according to the box instructions
Make Chocolate Pudding
Prepare instant pudding according to box instructions- eliminating 1/2 cup of milk
Chill
Prepare Chocolate Mocha Mousse
Mix Mascarpone cheese, heavy whipping cream, sugar, cocoa, Kahlua, and instant espresso powder
Whip until you see a consistent and fluffy mixture
Assemble your Parfait
Use a small clear bowl, wine, or martini glass – Partfaits should be pretty!
(The dollar store has inexpensive disposable versions)
Add a couple of small pieces of cake to start the parfait
Layer 5-6 Bourbon-soaked cherry halves next
Add a large spoonful of Chocolate Pudding on top of the cherry layer
For the next layer, add a large spoonful of Mocha Mousse
Add a layer of whipped cream
Repeat layers one additional time (except final whipped topping)
Keep refrigerated -add the last layer of whipped topping and pecans right before serving
Garnish with a cherry on top

While each of the parts is easy, consider baking the cake, making the instant pudding, and marinating the cherries the night before – then it’s just a matter of mixing the chocolate mocha- and you can start assembling.
This dessert tastes much better chilled- be sure you have built-in at least one hour for the dessert to chill
Save the whipped topping swirl on top of each dessert until you are ready to serve- Whipped topping seems to deflate over time and in the refrigerator.
Mix it Up
You can make this dessert family-friendly by eliminating the Bourbon and using plain pitted fresh cherries
Get crazy and add a layer of crushed Oreos – and substitute Oreo crumbles for the Pecans on top
