Double D Parfait (Rum-soaked Pineapple, Cake & Pudding Parfait)

This dessert tastes like ‘Drunk and Debauchery’- DD.  You will need big cups for this one!  Seriously -Spiked Double D Parfait is Rum-soaked Pineapple, Cake & Pudding Parfait with Coconut- Obscene!  Delicious on a warm summer day.

This is an adult-only dessert that will wow your friends!  Even Donkey from Shrek says “Parfaits are delicious!”

  • Yellow cake mix and required ingredients
  • Crushed Pineapple
  • Malibu Rum
  • Vanilla Pudding
  • Milk
  • Whipped Dairy Topping
  • Sweetened Coconut flakes

What is a Parfait?

The parfait originated in France around 1890.  It was developed as a frozen custard made by boiling eggs, sugar, and cream. In French, the word, ‘parfait’ means “perfect.” Over the years since, the parfait has been created as a variety of layered desserts served in a clear glass.  Today’s common parfaits include layered ice cream and fruit, or yogurt, fruit and granola.  Parfaits are beautiful individual desserts- they definitely add a little luxury to a dinner party.

Yellow Cake, Coconut Rum-soaked pineapple, Pudding, and Whipped Topping layered into a delicious Parfait

Yellow Cake Mix and ingredients required on the box


  • cup fresh crushed Pineapple
  • ½ cup Malibu Coconut Rum

Pudding Mix

  • 5.1 oz Vanilla Jello Pudding
  • 2 ½ cups milk

Whipped Dairy Topping (16 oz)

Sweetened Coconut flakes (toasted for 4 minutes)


Start with clear bowls, or glasses - Parfaits should be pretty

    Bake cake and let it cool

      Prepare Vanilla pudding with 1/2 cup less milk than the pudding recipe calls for - refrigerate

        Soak Crushed Pineapple in Malibu Rum

          Assemble Parfait

          • Place a small cake square in the bottom of the glass
          • Let fluid drain from the pineapple and layer rum-soaked pineapple on the cake layer
          • Add 1-2 teaspoons of chilled vanilla pudding
          • Add a layer of whipped dairy topping
          • Add a thin coat of toasted Coconut
          • Add the next layer of cake, then pineapple, and pudding- refrigerate
          • Just before serving, top with whipping cream and Toasted Coconut
          • Garnish with a small piece of pineapple on top

          This  boozy trifle is so refreshing and decadent when served chilled.  Keep your parfait refrigerated until right before serving, and then add the final whipped dairy topping and garnishes

          If you don’t have glass parfait glasses, you can get interesting clear plastic glasses at the dollar store.  Enjoy the quick and easy clean-up


          Heard that William Shatner had to discontinue his line of women's underwear. Apparently "Shatner panites" was a marketing nightmare



          Mix it Up

          • You can make this dessert family-friendly by eliminating the Rum and using plain crushed fresh pineapple
          • You can substitute crumbled Nilla Wafers for the Toasted Coconut
