Yellow Cake Mix and ingredients required on the box

    • cup fresh crushed Pineapple
    • ½ cup Malibu Coconut Rum

    Pudding Mix

    • 5.1 oz Vanilla Jello Pudding
    • 2 ½ cups milk

    Whipped Dairy Topping (16 oz)

Sweetened Coconut flakes (toasted for 4 minutes)

Start with clear bowls, or glasses - Parfaits should be pretty

Bake cake and let it cool

Prepare Vanilla pudding with 1/2 cup less milk than the pudding recipe calls for - refrigerate

Soak Crushed Pineapple in Malibu Rum

                Assemble Parfait

                • Place a small cake square in the bottom of the glass
                • Let fluid drain from the pineapple and layer rum-soaked pineapple on the cake layer
                • Add 1-2 teaspoons of chilled vanilla pudding
                • Add a layer of whipped dairy topping
                • Add a thin coat of toasted Coconut
                • Add the next layer of cake, then pineapple, and pudding- refrigerate
                • Just before serving, top with whipping cream and Toasted Coconut
                • Garnish with a small piece of pineapple on top

This dish is so refreshing when served chilled.  Keep this dessert refrigerated until right before serving, and then add the final whipped dairy layer and garnishes

                Mix it Up

You can make this dessert family-friendly by eliminating the Rum and using plain crushed fresh pineapple

You can substitute crumbled Nilla Wafers for the Toasted Coconut
