Cherry Popper Parfait

Eggs (as suggested by cake mix)
Butter or Oil (as suggested by cake mix)
Water (as suggested by cake mix)
1/2 lb Fresh Cherries (pitted and halved)
1/2 Cup of your Favorite Bourbon to marinate cherries
Chocolate pudding

Jello Instant Chocolate Pudding

Milk (We reduce the milk requested on the pudding box to make the pudding thicker)
Chocolate Mocha Mousse

Mascarpone Cheese

Heavy whipping cream

Whipped Dairy Topping (Spray can)

Instructions
Soak your fresh Cherries in Bourbon
Wash, De-stem, and 1/2 the cherries remove the pits and place in a small bowl
Pour your favorite Bourbon on top
Make Chocolate Cake according to the box instructions
Make Chocolate Pudding
Prepare instant pudding according to box instructions- eliminating 1/2 cup of milk
Chill
Prepare Chocolate Mocha Mousse
Mix Mascarpone cheese, heavy whipping cream, sugar, cocoa, Kahlua, and instant espresso powder
Whip until you see a consistent and fluffy mixture
Assemble your Parfait
Use a small clear bowl, wine, or martini glass - Partfaits should be pretty!
(The dollar store has inexpensive disposable versions)
Add a couple of small pieces of cake to start the parfait
Layer 5-6 Bourbon-soaked cherry halves next
Add a large spoonful of Chocolate Pudding on top of the cherry layer
For the next layer, add a large spoonful of Mocha Mousse
Add a layer of whipped cream
Repeat layers one additional time (except final whipped topping)
Keep refrigerated -add the last layer of whipped topping and pecans right before serving
Garnish with a cherry on top
