Creami Cannoli Gelato

You will enjoy this rich and cheesy Ricotta Gelato with Dark chocolate, salty Pistachios, and sweet Maraschino cherries.  This Creami Cannoli Gelato is a delicious twist on a classic Italian/Sicilian delicacy.

Since the 70’s people have been looking for the deep and hidden meaning for Clemenza’s famous line in the Godfather movie: ‘Leave the Gun, Take the Cannoli’ .   Clemenza had it right- Cannoli’s are f#ckn delicious- and no logical person would ever leave them behind.  (No deep psychological mind-bending necessary).

Gelato  Ricotta Base

  • Whole Milk
  • Heavy Cream
  • Whole-milk Ricotta Cheese
  • Salt Cinnamon
  • Vanilla

Egg Mixture

  • Yolks
  • Sugar

Mix-ins

  • Chopped Pistachios
  • Chopped Mini Chocolate Chips or Chocolate Wafers
  • Chopped Maraschino Cherries

Where did the Cannoli come from?  

Chances are, Cannoli’s were he influence of the Arabs who ruled Sicily, around the tenth century. They were the first to introduce sugar, and almonds to the Sicilian people, opening the door for wonderful culinary creations.

The first cannoli may have been created for a sultan in the Caltanissetta region. Others say a convent of nuns from the same region created the Cannoli.  Wherever it started, it traveled to the United States by the late 19th century, where it became an American favorite.

Materials

Milk Mixture

  • 2 cups Whole milk
  • 1 cup Heavy Cream
  • ¾ Ricotta
  • ¼ tsp Salt
  • ¼ tsp Cinnamon
  • 1 tsp Vanilla

Egg Mixture

  • 5 Egg Yolks
  • ¾ Sugar

Mix-ins for Later

  • 2 Tbsp Pistachios Chopped
  • 2 Tbsp High Quality Dark Chocolate Chopped
  • 1 Tbsp Maraschino cherries Chopped- with juice pressed out

Instructions

Heat the Milks

  • Heat the Whole milk, Heavy cream, Ricotta, Salt, Cinnamon and Vanilla on low heat and continue to stir until the mixture begins to bubble at the edges. DO NOT BOIL. Remove from heat, and set aside. (If you have a thermometer, you want the temperature to reach approximately 180 degrees F)

Prepare the Egg mixture

  • Mix the egg yolks and sugar in a separate bowl

Final Mix

  • Return the milk mixture to low heat, and str in the egg yolk/sugar mixture. Again, DO NOT BOIL. Keep stirring until blended, and then remove from heat.
  • Let the Gelato cool for 15 minutes
  • Pour the Gelato into 2 Ninja Creami Pints, and freeze for at least 24 hours

Ninja Creami Magic

  • Remove a pint from the freezer, and remove the lid
  • Place the pint in the Ninja outer bowl with the paddle lid
  • Turn the Ninja Creami ice cream maker on, and place the bowl in the locked-in upright position. Push the Gelato button
  • Wait for the machine to finish its blending process, and remove the outer bowl and pint from the machine
  • Add the chopped Pistachios, Chocolate and maraschino cherries to the pint- return the pint to the outer bowl with the paddle lid- and put back into the machine in the locked-in upright position. Press the mix-in button
  • Wait for the Ninja machine to complete the mixing and remove the bowl and pint from the machine
  • Serve immediately and enjoy

  1.  Add fresh ingredients to the Ninja Creami pint- Typically a base, fruit or savory flavor, other add-ins
  2. Freeze Ninja Pints and their contents
  3. Turn the Ninja Creami machine on.  Place the Ninja pint into the Ninja Creami’s machine outer bowl with the paddle lid, and position in the machine.  Press the appropriate button, and wait for your machine to do its magic.

 

 

What are typical bases for Ninja Creami ice cream?

Typical Creami Ice creams may use egg yolks, cream and sugar.   Other variations use a variety of milks, heavy whipping cream, and occasionally cream cheese, and even goat cheese.

For low-calorie ice creams, almond milk, cashew milk, or low-fat yogurt is often used in conjunction with sugar-free pudding powder.  Low calorie sweeteners include Stevia, Monk fruit, Swerve, Allulose.  Guar gum is sometimes used as a thickener, or way to avoid heavy creams.

Vegan Creami ice cream often feature non-dairy milks like almond or cashew.  They may also use Tofu, Cashew or Coconut butters, soaked nuts, even sweet potatoes and/or dates

Lactose-free milks or protein shakes are often used in Creami desserts for those with milk allergies

Some Creami desserts start with a Protein shake – Fairlife, B-Fit and Core Power shakes are popular options.

 

 

What are typical bases for Ninja Creami Sorbet?

Sorbet is typically simple syrup and pureed fruit.  Sorbets can include herbs, and alcohol

 

 

Can you use frozen fruit in a Ninja Creami?

If using frozen fruit, Dice or mince in a food processor.   Hard frozen fruit can damage your Ninja machine.  Fresh fruit can to add too much liquid to your recipe.

 

 

Can I add Fudge or Caramel to my Ninja Creami ice cream?

Fudge and Caramel, Nut butters, and Hazelnut spread do not mix well in the Ninja Creami.  These should be added after the dessert is blended.

 

 

How does the Ninja Creami work?

The Ninja Creami uses a different method of preparing cool and creamy treats.  The Creami uses technology that was previously only available in an expensive machine called the Pacojet.  The Creami  has an attached blade, which spins as it slowly moves into the frozen block of liquid.  The blade drills into the ice, shaving off pieces and whipping them together until the mixture forms a creamy dessert.

 

 

 

 

Why is my Creami ice cream crumbly?

Ice cream becomes crumbly for a variety of reasons, including not enough fat content, too much water content, or improper freezing.  Add 1/8 cup of milk, cream, or almond milk to your pint, and put the pint back into your Ninja on the re-spin cycle.  This re-spin cycle can be great friend to you!
The more time your ice cream is in the freezer- the more you will want to freshen it up, and add a small quantity of Almond milk- and re-spin.

Creami Cannoli Gelato Creami Tips

  • Do not boil the milk mixture.  Heat until the milk gets bubbly at the edges- or approximately 180 degrees F – stirring constantly
  • Do not fill the pints past the fill line- you could damage your machine
  • Always freeze Ninja pints level
  • Taste the Gelato mix before freezing to be sure you have the flavor/ sweetness you are looking for
  • Make sure you freeze for least 24 hours or more
  • If your gelato is a little crumbly, add a slight amount of milk and re-spin
  • Re-spin your Cannoli Gelato with a little milk if you have been storing in the freezer for a while

  2. I love the sound of this cannoli gelato. My husband is Sicilian and cannoli are his favourite treat! I have to look into getting a Ninja Creami. It seems like a fab appliance! BTW I’ve lived in Italy 20 years and have only ever heard Italians say ‘baciami il culo’ for kiss my ass. I’d be interested to know where ‘bacha ma culo’ comes from.
