This alcohol infused pastry does not have to be piped with cannoli filling, no deep fryer, and you don’t have to worry about those crispy cannoli shells getting soggy from sitting too long. Equipment
- Rolling Pin
- Kitchen Scraper
Materials
Amaretto Custard Cream
- 1 Egg
- ½ tsp Vanilla
- ½ cup Powdered Sugar
- 16 oz Half and Half
- 1 Tbsp Flour
- 1 Tbsp Corn Starch
- 3 Tbsp Amaretto
Cannoli Chips
- 1 1/4 Cups Flour
- 3 Tbsp Butter (softened)
- 2 Tbsp White Sugar
- ¼ cup Water (iced)
- Olive Oil Cooking spray
Toppings
- ½ Bar of finely chopped Hershey Chocolate Bar (or similar)
- ½ Cup Chopped Pistachios
Instructions
Make Your Amaretto Custard Cream
- Mix Custard ingredients with a hand blender in a medium glass bowl
- Put the bowl of custard in the microwave for 3 minutes, and cook
- Remove the bowl of custard from the microwave and stir
- Microwave custard for another 2 minutes
- Stir
- Allow the custard to cool
- Cover and refrigerate for 2 hours
Make Cannoli Chips
- Combine flour, softened butter, sugar, and water
- Mix well
- Use your hands to shape into two balls of dough
- Place a sheet of wax paper on a table, and sprinkle with flour
- Place a ball of dough on the wax paper, and sprinkle lightly with flour
- Use a rolling pin to make a large, thin, rectangle shape
- Use a kitchen scraper to trim the edges of the dough
- Remove the air fryer tray mesh tray
- Preheat the air-fryer to 400 degrees
- Use the kitchen scraper to cut the dough into triangles
- Place the Cannoli chip triangles on the air fryer mesh tray
- Spray the top side of chips with oil spray
- Place the tray over your sink and spray the bottom side of the Cannoli chips through the mesh tray
- Air fry Cannoli chips for approximately 5-6 minutes
- Remove the mesh tray and place the cooked chips on a baking tray
- Repeat the chip-making process with the second ball of dough
- Once all the chips have been removed from the oven,, and placed on a baking tray, use a flour sifter to cover both sides of the chips with powdered sugar
Assemble your Unholy Cannolis
- Place a large scoop of Amaretto Custard Cream at the bottom of a small Martini glass
- Sprinkle with finely diced chocolate and pistachios
- Repeat with remaining dessert glasses
- Store the desserts in the refrigerator until you are ready to ser
- Insert 2-3 Cannoli chips on the side of the custard just before serving
For a great traditional (Tube) Cannoli
You will want to shape dough circles around dowel sticks, and air fry the shells. For the Amaretto Custard cream, you will want an additional 1 Tbsp Flour, and 1 Tbsp Corn starch so the filling holds more firmly in the tube-shape Cannoli shell.
Non-Alcoholic version: If you want a more Holy Cannoli(no alcohol), leave out the Amaretto, and add 1/4 tsp, Almond extract instead. Mama Mia!

This is very pretty- and easier than cannoli- I love how the shells don’t get soft
