Chorizo Chica

The Chorizo Chica LOVES Chorizo- and loves how it makes regular recipes interesting and sexy- Maybe this Hot and Spicy Chica is you?  This Chorizo recipe has been in our family for decades- but the fun never fades.  Spicy and Savory Chorizo Sausage Dip with Tomatoes, Salsa, and Poblano pepper has always been a bold and robust party favorite.  Serve with tortilla chips and all of the toppings.

While most Chorizo dips have the sausage swimming in cheese (Creamy Chorizo Queso Dip)- this Chorizo Sausage dip one stands on its own!  Though we love to make a big batch and serve it so many ways


  • Nacho Bar:  Serve our Chorizo with lots of topping choices- Make it ‘Fully loaded’ with Cilantro, Green onion, jalapenos, Cheddar cheese, Lime, Sour Cream
  • Add to Warm Queso for a Creamy dip
  • Make Chorizo Scrambled Eggs:  Scramble eggs and add a scoop of Chorizo Chica.  Garnish with Cilantro
  • Chorizo Migas:  Chorizo Chica scrambled eggs with fried pieces of tortilla
  • Huevos Rancheros:  Fried Mini Tortillas with a Scoop of our Chorizo Chica,  Cover with a Sunny-side up egg, Cojita Cheese and Cilantro.
  • Use our Chorizo Dip recipe on top of Potatoes- Skins or fries
  • Make a Chorizo and Queso Quesadilla

What is Chorizo?

We love to use fresh Mexican-style Chorizo sausage in my cooking. There are two varieties:

  • Fully cooked or semi-cured: the Spanish/European version Pork cured meat originating from the Iberian Peninsula.  In Europe, chorizo is a fermented, cured, smoked meat, which can be sliced and eaten without cooking. Often added as a zesty ingredient to a variety of dishes
  • Raw and fresh:  Fresh Mexican Chorizo is a fatty, spicy sausage typically made from ground pork.  It is usually seasoned with Ancho and/ or Guajillo Chili peppers, Paprika, Cumin, Oregano, Garlic, Cinnamon, Clove, and Salt.  It has a wonderful zing and is a great way to add flavor to recipes.  Cook with Chorizo!
  • Spicy Chorizo dates back to the Spanish Conquests.  Toluca, in central Mexico, was one of the first places to register Chorizo production, and to this day Mexico considers Toluca Chorizo to be one of the finest in the country.  Of course, fresh Chorizo from your local grocer will be delicious in this recipe

  • Large Frying Pan or skillet
  • Bench Scraper or Spatula


  • Poblano Pepper (Diced)
  • 2 lbs Fresh Chorizo (no casing)
  • cups Tomato Salsa- Medium heat
  • 1 can Petite Diced Tomatoes (14.5 oz can)
  • 1 can Tomato Paste (6 oz can)
  • ½ tsp Salt
  • ½ tsp Pepper


  • Finely dice the Pablano Pepper and saute for 2-3 minutes in a large skillet over medium heat on your stovetop.
  • Add your fresh Chorizo sausage (without casings) and brown.
  • Stir continually, and use a Bench scraper or spatula to break up the sausage
  • Drain the grease from the Cooked Chorizo mixture
  • Add Tomato salsa, Diced tomatoes, and Tomato Paste
  • Add Salt and Pepper, and stir
  • Serve Warm

Aphrodesi’hacks’ for Spicy and Savory Chorizo Sausage Dip

  • Add some ‘Caliente’ to your Chorizo!  We have made this recipe mild to suit most party-goers…but you can bring on the heat.  Add diced Jalapeno’s, or substitute a hotter salsa.
  • Use fresh Chorizo, and remove any casings-  This recipe does not work well with the dried chorizo
  • Chorizo can be quite greasy- be sure to drain the sausage well before adding other ingredients
  • Crockpots or Slow cookers are great ways of keeping this appetizer warm at a party
  • Hearty appetizer- perfect Game Day dip
  • Chorizo Chica stores well in an air-tight container in the refrigerator.  Reheat in a glass container in the microwave- or slow cooker
  • Serve it Hot with your favorite chips

    I made a double batch of this Chorizo and served at a party in my slow cooker. Lined it up with all the fixings. It was a hit! Went fast
