  • Eggs
  • Parmesan cheese
  • Pancetta

Mustard Dip

  • Dijon mustard
  • Sour cream
  • Honey
  • Salt

Cocktail hot dogs in Puff Pastry with Pancetta and Creamy Mustard Dip

Materials

Teenie Weenie Ingredients

  • 1 14 oz Package Hillshire Farm Lil Smokies
  • 1 17.3 oz Package Pepperidge Farm Puff Pastry
  • 2 Eggs
  • ¼ cup Fresh Parmesan
  • 4 oz Diced Pancetta

Creamy Mustard Dip

  • cup Dijon Mustard
  • ½ cup Sour Cream
  • 1 Tbsp Honey
  • Dash Kosher Salt

Instructions

Prepare Baking Sauce

  • Crack eggs in small bowl and whip
  • Add Cheese
  • Stir well

Prepare Pancetta

  • Fry Pancetta on medium heat for about 10 minutes, or until crispy. Drain

Prepare Weenies

  • Prepare a baking pan with parchment paper or cooking spray
  • Preheat oven to 375 degrees
  • Lay out 1 sheet of Puff pastry
  • Cut pastry along the seams to make 3 pieces
  • With a pastry brush, paint the puff pastry strips with the baking sauce
  • Cut each strip down the middle, and then 4 equal cuts across (8 pieces per strip)

Wrap

  • Roll a mini hot dog in each puff pastry piece, Pinch the pieces together, and score with a fork.
  • Place seam-side-down on a baking tray
  • Brush the top of each roll with additional baking sauce
  • Place pieces of Pancetta on top of the wrapped hot dogs
  • Repeat the hot dog/pastry wrapping process with second envelope of puff pastry

Bake

  • Place the tray in the oven for approximately 20 minutes at 375 or until the rolls are golden brown
  • Place warm hot dog rolls on a serving tray

Creamy Mustard Dip

  • Combine the Dijon, Sour Cream, Honey and Salt
  • Pour in a serving dish

How do I use Pancetta?

Pancetta has a strong pork taste and salt level.  You will find its flavor profile is close to bacon, but without the smokiness.

Use Pancetta to add depth and flavor. Use it in Italian cuisine, to add richness to pasta dishes, pizzas, and soups. Crisp it up in a pan and use it as a topping for salads, sandwiches, or scrambled eggs.

Wrap sliced Pancetta around meat or vegetables before roasting to add flavor and help to keep the food moist.  Use Pancetta  in marinades or as a base for sauces, adding depth and complexity to the finished dish.

 

What is the difference between Pancetta, Bacon, and Prosciutto?

Pancetta is an Italian specialty made from pork belly. It’s cured, but not smoked.  Additionally, it is seasoned with salts, spices, and ingredients such as juniper berries. Eat Pancetta cooked and uncooked.  It has a fatty, silky texture, light pink color, and takes about 3 weeks to cure.  Sprinkle Pancetta on savory appetizers for meaty texture and salt.

Bacon is also made from pork belly, but it’s both cured and smoked, giving it an earthy flavor.  As you know, bacon has a dark pink color and is typically cut into strips It cannot be eaten raw. Bacon takes about 10 days to cure.

Prosciutto  is considered an Italian ham, made from the hind legs of a pig and is dry cured.  In fact, prosciutto’s dry cure takes about a year.  We love the thick, buttery, and smooth texture in thin slices. Serve Prosciutto raw.  Use it as a savory addition to your charcuterie or antipasto boards.

The original genius may have come from Betty Crocker herself, in Betty Crockers Cooking for Kids in 1957.  Pillsbury came out with pre-rolled Pigs-in-a-blanket in the 1970’s- and pretty much the rest is history.
