What are lox?

The term Lox comes from the Yiddish word for salmon, laks, Made from the belly meat of a salmon, lox is actually not cooked but is cured in a salty brine mixture for several weeks. Compared to smoked salmon, lox is saltier with a raw texture, making it a popular addition to a toasted bagel with cream cheese.  The salty, smoky flavor of lox is quite different from the mild, sweet taste of baked salmon

 

What is the difference between Lox and Smoked Salmon?

Lox is cured, but not smoked. .  Lox is first brined and then smoked at a low temperature for several days

Smoked salmon is cured but then also smoked, with a different texture than lox.

What is Nova Lox?

Nova lox has two meanings. Sometimes it’s simply lox made from salmon that comes from the Nova Scotia region. It can also mean a combination of using Salmon to make a specific style of smoked salmon, where the fish is cured and then lightly smoked afterward.  When people ask for a bagel and lox, they overwhelmingly mean Nova lox.

 

What is Gravlox?

Gravlax is a Scandinavian dish of salmon, that is buried in a crust of salt, sugar, and dill, and sometimes other ingredients.  It is not smoked, but rather preserved by drawing out moisture.  The chemical reaction involved in the preparation of gravlax is the osmosis reaction.  This herbaceous Nordic specialty is usually sliced thinly and served with a sauce.

Are Salmon Lox healthy?

Salmon is one of the healthiest foods. It’s full of beneficial Omega-3 Fatty Acids. Salmon is full of vitamins B-6 and B-12, both of which lower your risk of a heart attack. Vitamin B-6 also helps with the production of serotonin – ‘happiness hormone’ – that regulates your mood and sleep cycles

Salmon lox has the added advantage the combination of brining and cold smoke makes the health benefits of lox especially abundant.

Calories in lox are low compared to many other fatty foods. For example, one ounce of salmon lox comprises of only 33 calories, as opposed to 89 calories in 1 ounce of French fries.

 

Do lox have risks?

Lox are high in sodium and may not be a good choice for people who chiefly eat processed foods.   Even though salmon lox calories are low, the same can’t be said about bagels and cream cheese which are often served together.

Another issue is that both lox and cold smoked salmon are eaten uncooked, so they are considered among the foods that can cause food borne illnesses.

How long does Lox stay fresh?

Lox will stay fresh for about 5-8 days in the refrigerator.

 

Can you freeze lox?

Yes, you can freeze lox for 2-3 months. Store it in a freezer bag and remove all air before freezing. Let thaw in the refrigerator.

Materials

Ingredients

  • 1 English Cucumber slices
  • 1 5.2 oz Boursin Shallot & Chive Gournay Cheese (or your favorite variety)
  • 1 4 oz Salmon Lox or Smoked Salmon
  • 1 package Fresh Dill
  • Pepper

Instructions

  • Wash and peel stripes into the English Cucumber
  • Cut the cucumber into even wedges- about ⅛ of an inch
  • Spread approx ½ teaspoon of Boursin cheese on the cucumber wedge
  • Use clean cooking scissors to cut wedges of salmon, and place on top of the Boursin cheese
  • Top each cucumber slice with a small sprig of dill
  • Pepper to taste
  • Serve on a garnished tray
