Where does Gazpacho come from?

Gazpacho is Spain’s great gift to the world. This popular soup originated from the Andalusian area – and its origins may date all the way back to the 7th century.  This cold soup is thought to have started with bread, garlic, salt, vinegar, and olive oil.  Gazpacho was a simple but popular meal for peasants and shepherds in Spain.  In fact, this ‘White Gazpacho’ is still popular today.

Christopher Columbus brought the tomatoes and peppers back to Spain centuries after the ‘white gazpacho’ got its start.  The traditional red Gazpacho Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, since it is refreshing and cool.
