It is a great day to try a  Spicy Chorizo Casserole

I am not a morning person.  I do not eagerly leap out of bed at the crack of dawn ready to dive into the promise of a new day.  Nor, do I jump onto a Peleton, bicycle, or yoga mat with some stranger in my ear feverishly trying to convince me that “I GOT THIS!” 

 

I prefer to ease into my day with a strong cup of coffee and a delicious morning meal.  That is the beauty of FFS Breakfast Bake- especially if you are entertaining.  It is simple enough to make the night before, and pop it in the oven the next morning.  This fabulous and easy strata is packed with flavor.  You will be joyously greeting the new day.   In fact, morning person or not, you might just find yourself saying…        “FFS,  I REALLY HAVE GOT THIS”.

Chorizo, Bacon, Spinach, and Onion Strata

Materials

  • 8 oz Trimmed Bread cubes
  • 6 Eggs
  • cups Milk
  • ½ cup Half and Half
  • 5 oz Frozen Spinach
  • 2 slices Bacon-Diced
  • ½ Onion- Diced
  • 1 lb Fresh Chorizo
  • 4 oz Italian Blend Cheese
  • ½ tsp Freshly Ground Pepper

Instructions

Prepare Bread

  • Trim crust for approximately ½ loaf of bread
  • Cube bread
  • Place cubes at the bottom of a 4-quart baking dish (covering the bottom of the dish)

Prepare Eggs

  • Whip Eggs, Milk and Half and Half in a bowl- and set aside

Prepare Fresh Chorizo, Bacon and Onion

  • Remove any casing from the sausage
  • Fry the Chorizo sausage and chop into small bits while simmering
  • Drain the Chorizo on paper towels
  • Wipe grease out of the skillet
  • Fry Bacon and diced Onion together
  • Remove from the pan with a slotted spoon and allow to drain on a paper towel
  • Add meat and onion on top of cubed bread

Prepare Spinach

  • Microwave to defrost the Spinach
  • Place Spinach in a colander, and press as much liquid as possible out of the greens
  • Pull Spinach clumps apart and place the greens on top of the meat

Finish Assembly

  • Cover with grated Italian Cheese and Ground Pepper
  • Pour the Egg mixture on top of the Spinach
  • Cook at 350 Degrees for 1 hour and 15 minute

    I was out of half and half, so I substituted whipping cream. It was a little sweeter than previous time- but really good. Think this recipe could handle different veggies, and different breakfast meats depending on what is in the fridge- I look forward to more experimenting.

    I love the way Chorizo livens up this Casserole. I usually make this Casserole the night before- Comes out perfect
