Have you every had ‘Wacky’ cake?  or Lemon Crazy cake?  It is amazing… Cake made without eggs, milk or butter.  Developed as a Great Depression cake- when basic ingredients were difficult to get.  These cupcakes are fast, easy and delicious- with lemon zest and fresh lemon juice – the recipes have stood the test of time (Though we have amped it up a bit!).  This cupcake features a beautiful lemon tang, creamy light meringue, and a pipette of Homemade Limoncello.  These gorgeous cupcakes will be the star of your next party.  The incredible LEM-RANG flavor and the alcohol infused-pipette turn a Lemon-meringue inspired cupcake into an adult-only sensation.   Enjoy the WOW

Equipment

  • Large Mixing bowl
  • Cupcake or Muffin tin
  • Plastic food pipettes

Materials

Cupcakes

  • Cup Flour
  • 1 Cup Sugar
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 6 Tbsp Olive oil
  • 1 Tbsp Vinegar
  • zest of One and a half lemons
  • ½ Cup Fresh Lemon Juice
  • ½ Cup Water

Meringue

  • 6 Large Egg whites
  • ½ Cup Sugar
  • ¼ tsp Cream of Tarter

Pipettes

  • ½ Cup Homemade Limoncello

Instructions

Make Lemon Wacky Cupcakes

  • Preheat the oven to 350 degrees
  • Add 12 cupcake liners to a cupcake medium cupcake tin- set aside
  • Mix all of the dry ingredients in a mixing bowl - Stir well
  • Add the wet ingredients, and stir well with a fork or spatula
  • Fill all 12 cupcake liners with batter
  • Place in the tin in the oven and bake at 350 for 25 minutes
  • Use a toothpick to test the 'doneness' of the cupcake. (The toothpick should be inserted in the center of a cupcake- and come out clean)
  • Remove from the oven and let cool completely, before adding meringue

Make the Meringue

  • Separate egg whites and place them in a spotless glass mixing bowl (Careful - no yolks)
  • With an electric mixer, whip the egg whites until they are glossy and smooth
  • Add the cream of tarter
  • Slowly add the sugar
  • Continue to beat on high until the whites form stiff peaks
  • Carefully use a kitchen torch to lightly toast all sides of the meringue

Pipettes

  • Put the Limoncello in a small bowl
  • Pinch the bulb of the pipette to squeeze the air out, dip the tip into the Limoncello. Release the pinching, and draw the lemon liqueur up into the bulb of the pipette. (Will fill approximately 70%)
  • Place the pipette into the cupcake- Place high on the cupcake (they may slide down slightly)
  • Serve your gorgeous cupcakes
