Smoked peach blackberry cobbler

Enjoy a Grilla Thrilla – a Smoked peach blackberry cobbler.  Who doesn’t love a smoked dessert?  Juicy and bubbly – Fresh and Homemade Fruit Cobbler has to be at the top of the list.  Cobbler is so easy to make- and tastes delicious.  Grilled fruit – Sweet and smokey-  a perfect complement for a scoop of vanilla ice cream.  This cobbler is a little boozy too!

Grilled and smoked desserts are the perfect encore to a summertime feast.  It makes complete sense- you have created a memorable meal on the grill it should be complemented by something smokey and delicious.

This dessert can be made on a grill, pellet grill, smoker, on a ceramic cooker, like a Big Green Egg- It can also be made in the oven.  Hot DAMN!

  •   Gas Grill, Pellet Grill or smoker, Traeger , or Big Green Egg (ok the oven works too!)
  •   13×9 Glass or Ceramic dish or extra large cast-iron skillet

Ingredients

  • Sugar
  • Cinnamon
  • Lemon Zest
  • Vanilla
  • Amaretto
  • Cornstarch
  • Salt

Fruit mixture

  • Fresh Peaches
  • Fresh Blackberries
  • Cayenne Pepper

Cobbler Topping

  • Butter
  • Flour
  • Baking Soda
  • Milk
  • Almonds

 

In the above image you see some frozen cubes – I’ve got me a Meyers lemon tree and I squeeze the juice of those I can’t use right away and freeze them in ice cube trays.   Also – using frozen peaches makes life easier.  Immediate gratification is a prime force in the life of this Cusser.

Equipment

  • Smoker or offset grill (Big Green Egg)
  • 13" x 9" ceramic or glass dish

Materials

  • cups Granulated Sugar ½ cup for fruit, 1 cup for batter
  • ½ tsp Ground Cinnamon
  • 2 tsp Lemon Zest
  • 2 Tbsp Fresh Squeezed Lemon Juice
  • ½ tsp Vanilla Extract
  • ½ cup Amaretto
  • 1 Tbsp Cornstarch
  • ¾ tsp Table Salt
  • 5 cups Sliced Peaches - 6 to 8 fresh (½ in. thick), frozen is acceptable
  • cups Fresh Blackberries Can also use raspberries
  • ¼ tsp Cayenne Pepper (optional)
  • 10 Tbsp Unsalted Butter (melted)
  • 1 cup All-purpose Flour
  • 1 Tbsp Baking Soda
  • ½ cup Whole Milk
  • ¼ cup Sliced Almonds

Instructions

  • Set up your smoker for offset / indirect cooking. Preheat to 350°
  • Mix ½ cup sugar, cinnamon, lemon zest, lemon juice, amaretto, cornstarch, ½ tsp salt and cayenne in a large bowl.
  • Add peaches and blackberries. Toss to coat. Set Aside.
  • Melt the butter in a small saucepan over low heat and pour into backing dish.
  • Whisk flour, remaining (1cup) sugar, baking powder, milk vanilla, ¼ tsp salt in a small bowl.
  • Pour batter in baking dish over melted butter. Top with fruit mixture and almonds.
  • Set dish on smoker for indirect heat. Close the lid and bake for 45 mins or until crust is light golden brown.
  • Remove and let cool for 15 mins.
  • Top with vanilla bean ice cream.

Notes

If fresh fruit is not available, you can use frozen thawed.
If blackberries are out of season, try raspberries!
Top with some vanilla bean ice cream.
