Watch out for the pricks! Be sure the prickly pear fruit are soaked or charred to get the pricks off. Sometimes you can buy the fruit from the market already de-pricked!
Cut the fruit in half and scoop out the seedy pulp- and add to your pot
Use a potato masher to break up the pulp
Add the sugar and water to the pot
Bring the mix to a boil, and then turn down the heat and let it simmer for 10 minutes. Remove from heat and let cool
Place a mesh strainer over a glass bowl or measuring cup. Stir the pulp in the strainer to release the liquid. You want to remove seeds and sentiment in this step.
Add the lemon and stir
Store in a sealed glass jar for up to a month in the refrigerator
