Equipment
1 Mixer
1 cookie sheet
Materials
2cupsFlour
¾cupPistachios (finely chopped)
½cupCraisins (Finely diced)
¼cupSugar
1cupButter (Softened)
2tspVanilla
¾cup Powdered Sugar(For cookie decoration)
Instructions
Preheat oven to 400℉,
Spray a cookie sheet with cooking spray and then line with parchment paper (Paper stays in place)
Combine all ingredients (except for powdered sugar) in the mixing bowl
Beat the ingredients at a low speed. Scraping the bowl as needed to combine all of the ingredients. (Beat just until well-mixed)
Shape the dough into 1 inch balls and place on the prepared cookie sheet.
Place the cookie sheet in the oven and bake for approximately 10 minutes (or until the balls brown slightly)
Remove your Yeti Balls from the oven, and let them cool for 2-3 minutes
Roll the balls in a small bowl of powdered sugar. (Since they are still warm I like to roll them around with a spoon)
