Instructions
Set up your smoker for offset / indirect cooking. Preheat to 350°
Mix ½ cup sugar, cinnamon, lemon zest, lemon juice, amaretto, cornstarch, ½ tsp salt and cayenne in a large bowl.
Add peaches and blackberries. Toss to coat. Set Aside.
Melt the butter in a small saucepan over low heat and pour into backing dish.
Whisk flour, remaining (1cup) sugar, baking powder, milk vanilla, ¼ tsp salt in a small bowl.
Pour batter in baking dish over melted butter. Top with fruit mixture and almonds.
Set dish on smoker for indirect heat. Close the lid and bake for 45 mins or until crust is light golden brown.
Remove and let cool for 15 mins.
Top with vanilla bean ice cream.
Notes
If fresh fruit is not available, you can use frozen thawed.
If blackberries are out of season, try raspberries!
Top with some vanilla bean ice cream.
