1BundleGreen Onions-(Onion only-no greens)
2Lemons (Zested and Squeezed)
½CupMinced Garlic
2TbspCreole Seasoning
2tspRed Pepper Flakes
½CupFresh Chopped Thyme (Loosley packed)
½Cup Fresh Chopped Oregano (Loosely packed)
Oyster Topping
3BundlesGreen Onions (Onion and green stems)
1 PoundBacon (Fried and diced)
1 PoundGround Mild Italian Sausage (Fried)
4CupsShaved or Grated Romano or Parmesan Cheese
Instructions
Make Mother Shucker Sauce
Combine Melted Butter, Onion, Lemon, Garlic, Creole Seasoning, Red Pepper Flakes, Thyme, and Oregano
Use a hand mixer to emulsify
Let cool
Emulsify again, so the sauce is thick and creamy
Set aside
Oysters
Allow closed Oysters to steam on the grill for at least 5 minutes to make shucking easier
Use a Heavy Mitt and an Oyster Shucking Knife to gently open Oysters
Check and discard anything besides the Oyster (Sometimes there can be a small crab or pieces of shell)
Discard the top of the Oyster
Repeat until you have a dozen open Oysters
Assemble and Grill your Oysters
Put 12 open Oysters on the Grill
Generously fill Oyster with Mother Shucker Sauce
Sprinkle each Oyster with Green Onions, Bacon Bits, and Sausage pieces
Cover each Oyster with shaved or grated cheese
Close the lid of the grill, and allow the Oysters to cook for approximately 4-5 minutes, or until the edges get slightly brown
