Start with a baking sheet lined with parchment paper
Use a food processor to grind all 36 cookies to a granular consistency (Make sure you use the cookies and the middles) -Set 1/4 cup of the crumbs aside for later
Add a softened 8oz package of cream cheese to the crumb mixture- pulse until it is well combined
Scoop out 1 Tablespoon at a time and create 1-inch balls
Place the balls in the freezer for at least 30 minutes
Prepare to cover your Truffle Balls in Chocolate
Melt your chocolate at a low temperature in a double boiler-occasionally stirring
Remove Truffle Balls from the freezer
Hold a butter knife on its side, and place an Oreo truffle on top. With your other hand, spoon chocolate over the truffle. Gently shake off excess chocolate.
Use a second butter knife to gently push your beautiful chocolate-covered truffle onto a second wax or parchment covered tray
Immediately sprinkle the chocolate truffle with the Oreo crumbs you set aside- or other decoration (Ths must be done before the chocolate hardens)
Repeat for each truffle
After all the truffles are dipped and decorated- return them to the refrigerator or freezer
Once the candies are set, they can be put in candy papers.
