What are chocolate truffles?

Chocolate is a decadent treat that is hard to refuse. The chocolate industry has been creating upscale delicacies with new flavors and interesting combinations.  This is especially true with the “The Chocolate Truffle”.

“Truffle” is derived from a LATIN word meaning “Lump”. Truffles are named after the mushrooms because of their striking resemblance.  The first chocolates were made in a crude way and looked similar to mushroom lumps.

A chocolate truffle is a chocolate delicacy with a chocolate ganache center coated in chocolate, cocoa powder, coconut, or chopped and roasted nuts, usually spherical, or curved shape.

To be a Truffle the candy must have a ganache filling.  Chocolates with fruit or cream center, for example, are not truffles.  The expanding list of chocolate truffles today are due to differences in ganache composition.

Where do Chocolate Truffles come from?

When Henri Nestle formed the first milk chocolate in 1879, chocolatiers in France and Switzerland took notice, leading to the development of the velvety-soft chocolate possibilities, blending cream and solid chocolate together to form a new texture of soft chocolate.

Finally, on Christmas Day, 1895, French patisserie Louis Dufour came up with the idea of chocolate truffles.  He created  ganache and rolled it into round balls, before dipping them in melted chocolate. The chocolate-covered ganache was then rolled in cocoa powder.  Louis relative, Antoine Dufour immigrated to England in 1902 and used his family’s truffle recipe, and popularized the truffle in his newly opened Prestat Chocolate Shop in London.

Truffles were initially for the royals and the wealthy, but today they are purchased all over the world.

Who buys Chocolate Truffles?

Globally, Technavio reported demand for truffles is expanding at a compound annual growth rate of 5 percent between 2018 and 2022, with incremental sales growing by $1.67 billion.  Amazingly, 41 percent of the growth would come from the Americas.  The driving force behind the growing sales is supermarkets and hypermarkets, or “big-box stores,”.

National Truffle Day is May 2nd each year.  Get ready with Whore-eos from Cuss Kitchen

Mix Up your Chocolate Oreo Truffles

-Looking Pretty: Cover your Oreo in white chocolate and let it set, and then drizzle a zig-zag pattern in dark chocolate (or vice versa)

-Celebrate the Holidays: Add 2 teaspoons of peppermint extract to the Oreo mixture.  Individually cover the frozen truffles in chocolate and then sprinkle crushed candy canes on top of the freshly dipped truffles

-Boozy:  Try adding 2 Tablespoons of your favorite liquor to the Oreo Mixture.  Try Baileys or Kahlua, or Rumchata

-Nutty: Instead of 8 ounces of cream cheese in the Oreo mixture, Substitute 4 ounces of cream cheese, and 4 ounces of Nutella, or Creamy Peanut Butter

Why would I want to use melting wafers, instead of other kinds of chocolate?

Chocolate wafers,  melting wafers, candy melts, or melting chocolate – are disks of chocolate that are used as a coating on cookies, fruit, ice cream, candy, molded candy and desserts.  Wafers are compound chocolate, with vegetable oil in place of the cocoa butter. As a result, they are easy to melt and mold.

You will find melting wafers easier to use.   Additionally they offer consistent candy making and baking results with no tempering required.  Lastly you will love the smooth-as-silk texture and lustrous sheen this type of chocolate brings to dessert.
