Peaches (Peeled and thinly sliced)

Focaccia bread or other crusty bread

Melted Butter

Balsalmic Glaze

Toasted pine nuts

Large Sprig
Fresh rosemary
Instructions
Prepare your crostini
Thinly slice the bread
Place bread slices on a baking sheet
Paint each slice of bread with melted butter
Bake at 400 degrees for approximately 5 minutes
Let cool
Thinly slice peaches
Prepare whipped feta
Combine feta cheese, yogurt, oil, pepper flakes, and lemon zest in a food processor
Whip until smooth
Grill or Roast peaches
Grill or roast peaches at 400 degrees for approximately 20 minutes or until soft
Allow peaches to cool
Finish your appetizer
Spread whipped feta on the toasted bread slices and place on a serving tray
Layer slices of peaches on top of the whipped feta cheese
Squeeze a zig-zag of balsamic glaze over the peaches on each crostini
Sprinkle pine nuts and fresh rosemary on top of the glazed peaches
Serve and enjoy
