1 Pastry piping bag and tip
Materials
1dozenEggs
¾Cup Mayonnaise
1TbspSriracha
2tspDijon mustard
½tspSalt
½tspPepper
Everything Bagel Spice
Fresh Rosemary Sprigs
Instructions
Get Ready to Bake
Preheat your oven to 350 degrees
Generously spray the muffin tin with cooking spray
Bake the Eggs
Crack an egg into a muffin cup
Use a spoon to remove the egg yolk, and set the yolk in a separate muffin cup
Repeat with the rest of eggs- leaving 12 muffin wells filled with egg white, and 12 muffin wells filled with egg yolks
Place a baking tray in the oven and carefully add water to the bottom of the tray until the bottom of the tray is covered
Place the eggs in the oven by putting the muffin tin on top of the tray of water, so the water touches the bottom of the muffin tin
Bake the eggs in the oven at 350 degrees for 18-22 minutes (Egg whites should appear firm)
Carefully remove the muffin tin from the oven, while leaving the tray of hot water in place- Be especially careful that you do not splash hot water on yourself
Let the eggs cool on a rack
Turn off the oven
Remove the tray of water once it has cooled, and dispose of it
Prepare the Yoke Topping
Remove the cooked egg yokes from the muffin tray and put them in a medium bowl
Add the Mayonnaise, Sriracha, Dijon mustard, Salt, and Pepper to the medium bowl, and use a mixer until well combined
Make the Deviled Eggs
Gently circle each Egg white in the tin with a sharp knife
Remove the Egg white bases from the muffin tin, and place them on a serving tray
Add the Yolk mixture to your pastry bag, and use your favorite pastry tip
With the tip of your pastry bag, circle the outer edge of an Eggwhite base, continue circles towards the center of the base, and form an attractive mountain shape
Repeat with each Egg
Add a small sprig of Rosemary to the top of each Egg yoke mound
Generously sprinkle 'Everything Bagel' seasoning on the top of each Egg Yolk mound
