Where did Hummus come from?

Hummus is a creamy and nutritious spread that has quickly become a staple in the Western world.    Hummus, derived from the Arabic word “hummus,” means chickpeas, which are one of the essential ingredients of this dish.
However, the origin of hummus is in dispute among food historians, as records date back thousands of years. Some believe that the dish originated in ancient Egypt, where it was consumed by the wealthy and high-ranking members of society. Ancient texts mention a dish similar to hummus called “tahana,” which was made using chickpeas, tahini, and spices.
Others claim that it hails from the Levant region, which encompasses modern-day Lebanon, Syria, Palestine, Israel, and Jordan. It is said that trading caravans brought the recipe for hummus to the Mediterranean, where it was adapted to include ingredients such as olive oil, cumin, and lemon juice.
Despite this controversy, most experts agree that hummus has been a part of Mediterranean and Middle Eastern cuisines for thousands of years, and that it has expanded in reach and popularity around the world in the last century. What are the origins of guacamole?

One possibility is that the dish was first created by the Aztecs in what is now modern-day Mexico. The Aztecs were known to have a strong culinary culture that included using avocado in their dishes. They also frequently consumed tomatoes, onions, and garlic, which are all common ingredients in modern-day guacamole. However, there is little concrete evidence to support this theory.

Make Hummus & Guacamole Tomatoes recipe

Campari Tomato filled with Black-bean hummus, and Hass Spicy Guacamole

Materials

  • 10 Campari Tomatoes
  • 7 oz Spicy Guacamole
  • 10 oz Black Bean Hummus
  • Fresh Cilantro

Instructions

  • Wash tomatoes
  • Cut tomatoes in half (around the middle of the tomato)
  • Use a spoon to remove the center of the tomatoes, so you end up with a smooth cup
  • Lightly salt tomatoes
  • Use a spoon or knife to fill the center of each tomato with Black Bean Hummus
  • Add a spoonful of guacamole on top of the hummus on each tomato half
  • Plant a small flag of Cilantro in the center of the Guacamole of each appetizer
  • Place Whoop hAss tomatoes on a tray
