Whipped Feta and Peach Crostini- can rock your world- Yum!

Whip it- Whip it good.  It’s almost impossible not to sing those words – best known to most as an
unforgettable Devo classic.

The fact is, the word “whip” has never had many positive connotations, other than Devo’s memorable anthem.  Unless we’re talking about whipping in the culinary sense – where we whip delicious heavy cream or, even better, scrumptiously savory soft
cheese.

In this case, sharp, tangy Feta is whipped into a delectable frenzy of flavor, with Greek yogurt, olive oil, lemon, and red pepper flakes. Next, it’s layered atop buttery, lightly toasted focaccia bread, and crowned with peaches that have been sweetly caramelized by roasting or grilling. A final drizzle of rich, dark balsamic vinegar glaze, and a dusting of crunchy pine nuts & fragrant rosemary really make this
appetizer SING!

 

Ingredients for Whipped Feta and Peach Crostini

Whipped Feta

  • Feta Cheese
  • Plain Greek Yogurt
  • Olive Oil
  • Red Pepper Flakes
  • Zest of 1 lemon

  • Butter

Equipment

  • Food Processor

Materials

Whipped Feta

  • 8 oz Block feta cheese
  • 6 oz Plain greek yogurt
  • 1 Tbsp Olive oil
  • ¼ tsp Rep pepper flakes
  • Zest of 1 lemon

Peaches

  • 4 Peaches (Peeled and thinly sliced)
  • ¼ Cup Balsalmic glaze

Other

  • 1 Loaf Focaccia bread or other crusty bread
  • ¼ Cup Melted Butter
  • ¼ Cup Balsalmic Glaze
  • ¼ Cup Toasted pine nuts
  • 1 Large Sprig Fresh rosemary

Instructions

Prepare your crostini

  • Thinly slice the bread
  • Place bread slices on a baking sheet
  • Paint each slice of bread with melted butter
  • Bake at 400 degrees for approximately 5 minutes
  • Let cool
  • Thinly slice peaches

Prepare whipped feta

  • Combine feta cheese, yogurt, oil, pepper flakes, and lemon zest in a food processor
  • Whip until smooth

Grill or Roast peaches

  • Grill or roast peaches at 400 degrees for approximately 20 minutes or until soft
  • Allow peaches to cool

Finish your appetizer

  • Spread whipped feta on the toasted bread slices and place on a serving tray
  • Layer slices of peaches on top of the whipped feta cheese
  • Squeeze a zig-zag of balsamic glaze over the peaches on each crostini
  • Sprinkle pine nuts and fresh rosemary on top of the glazed peaches
  • Serve and enjoy
