Feel like a good Poke?   Maybe it’s been a while since you have had a really satisfying Poke?

Tuna Poke Martini appetizer, that is.    You will be saying Ah-Ha! to the Ahi…  This is an elegant and impressive appetizer for special occasions.  A sinfully indulgent combination of sweet Ahi Tuna, Avocado, spicy Sriracha, Crème Fraiche, and crunchy seaweed salad, finished with fine scallion slices and black sesame seeds.  Gluten-free/Keto and low calorie- and better yet- Fresh Healthy ingredients – No cooking!

Fun for an intimate party, Holiday, or special dinner.

For the record, ‘In the RAW’ isn’t meant to imply that you serve this dish sans clothes.  Research shows that most guests prefer fresh, raw Ahi tuna without a fresh, and naked host- almost every time.  Trust us.  We did the research.

Where does the Poke come from?

Ancient Hawaiians feasted on freshly caught seafood, sea salt, and seaweed.  Waves of immigrants from China and Japan introduced soy sauce and sesame oil.  The types of fruits and vegetables grew, and each new group to Hawaii has added dishes to Hawaii’s culinary menu and the selections of poke bowls have multiplied.

Hawaiian Poke recipes continue to lead in innovation, using rice as a base, and unusual ingredients such as hi limu (seaweed) and spicy ahi poke, kimchee shrimp, furikake salmon, miso tako (octopus), pipikaula (dried beef), bacalao poke(Portuguese dried salt cod), and SPAM(infused into the culinary culture by the US military during WWII).  Other fresh ingredients may include quinoa, chicken, zucchini noodles, cauliflower, corn, kale, onion, lettuce, bamboo shoots, mango, orange slices, almonds.

 

 

What is the difference between Ahi tuna and Poke tuna?

Ahi tuna is a species of tuna found in all tropical/subtropical oceans. Ahi tuna and yellowfin tuna are different names for the same fish. It’s a lean, white fish commonly served as sushi, sashimi, cooked rare or medium-rare.  It’s a good source of protein, omega-3 fatty acids, and vitamin B12

Poke is an expansive term that generally refers to raw pieces of tuna cut into cubes, then marinated with a mixture of soy sauce, and/or sesame oil and may be mixed with onion. The word poke simply means “chunk” in Hawaiian.  However, Poke doesn’t necessarily have to be tuna or even seafood, nor does it have to be raw or cubed.

Equipment

  • 8 Chilled Martini Glasses

Materials

  • 8 oz Fresh Seaweed Salad
  • 1 lb Sushi-Grade Tuna - cut into ¼-inch cubes
  • Tbsp Sesame Oil
  • 1 Ripe Avocado- cut into ¼-inch cubes
  • ¼ cup Lime juice
  • 4 oz Creme Fraiche
  • 1 tsp Sriracha Sauce
  • 1 Tbsp Finely chopped scallions
  • 1 ½ Tbsp Black Sesame seeds

Instructions

Chop

  • Cut raw Tuna into ¼-inch cubes. Place in a bowl
  • Add Sesame oil to the tuna cubes, stir and set aside
  • Cut Avocado into ¼-inch cubes
  • Sprinkle the avocado cubes with lime juice to keep them fresh-looking longer (Discard extra juice)
  • Finely chop scallions

Prepare Creme Fraiche

  • Whisk together Sriracha and Creme Fraiche (add additional Sriracha if you prefer more spice)

Assemble your Tuna Martini

  • Add 1½ ounces of seaweed salad to each Martini glass
  • Add 2 ounces of Tuna to the top of the Seafood Salad
  • Add 5-6 Avocado pieces
  • Drizzle Sriracha/CremeFraiche over the Tuna
  • Garnish with green Scallions and black Sesame seeds on top
  • Serve chilled

Always buy your Sushi-grade Tuna at a trusted fish market.  Since you are serving raw fish, it is important it is of the highest quality and fresh.  Your big box stores such as Costco and Sam’s club typically do not carry the top Sushi grade.

Buy your seaweed at a grocery store that sells fresh-made sushi

Sprinkled lime juice or lemon helps keep avocados looking fresh longer.  Citrus fruits naturally contain strong antioxidants that work against oxygen to slow browning.
